Spicy Slaw

If you are adverse to coleslaw, this will change your mind. This spicy slaw is vibrant, fresh, and full of brilliant color and flavor. Don’t miss this one!

Spicy Slaw

Servings: 4 hefty ones

1/4 head green or purple cabbage, sliced thin (organic preferred)
1/2 red onion, sliced thin
2 jalapeños, sliced thin (or 2-3 Thai chilies for more heat)
2 medium sized carrots, grated
1 small red bell pepper, sliced thinly into strips (organic preferred)
1 tomato, seeds removed & chopped (organic preferred)
1 handful fresh cilantro, chopped (organic preferred)

For Dressing:
1/2 cup homemade mayo (or Primal Kitchen Avocado Mayonnaise)
Juice of 1/2 lime
1 Tbsp. red chili flakes (or more if you like!)
Salt & pepper to taste

Add all dressing ingredients into a bowl, mix until a creamy consistency and set aside. Combine all slaw ingredients and toss gently together. Mix in dressing and adjust the seasoning to your taste. Use the slaw immediately or refrigerate until ready to use. Please note slaw will wilt with time due to the lime juice, so if you want it vibrant and crunchy, use as soon as possible. Variations:

While this version is great, feel free to add or omit any vegetables. Possible add-ins could be roasted corn, purple cabbage, jicama, green onion, different peppers, garlic, basil instead of cilantro… anything!
