Fresh Fig Jam

I’m not a jam (or jelly) person because I don’t like cooked fruit… BUT this fresh fig jam is so good and it’s cooked so quickly it hardly counts. Best of all it has only 3 ingredients! It’s freshened up by lemon juice and a touch of sea salt. It has no added sugar just beautiful fruit and an inviting green color. Who wouldn’t love this?

Fresh Fig Jam
Makes about 2 cups

1 1/2 lbs. fresh figs, washed and finely chopped (any variety)
Juice of 1 lemon
1 pinch of sea salt

Place chopped figs, lemon juice and pinch of sea salt in a medium sized saucepan over medium heat. Bring to a boil and then reduce to a simmer for 10 mins. Done! Place jam into small glass jars and twist on lids. Don’t tighten all the way until they have cooled completely. Refrigerate and enjoy!

If you’d like to freeze the jam, add to sealable glassware and store for up to 3 months.
