
I can’t think of a more beautiful start to a meal than this Fig & Burrata Salad. It hits all the notes! Sweet fresh figs, salty prosciutto, creamy burrata, crunchy pistachios all delicately dressed with a white balsamic vinaigrette. It’s heaven and perfect for entertaining.
Fig & Burrata Salad
Makes 3-4 small servings
2 big handfuls arugula (washed & dried – organic preferred)
3 fresh figs, sliced in half (from top to bottom)
1 ball burrata, room temperature
5 slices prosciutto
1 handful shelled pistachios, chopped
White balsamic viniagrette
Fleur de sel (can use sea salt instead)
Freshly ground pepper

In a bowl, dress arugula with vinaigrette making sure each piece is lightly coated. Arrange onto a serving plate. Delicately place burrata in the center of the greens. Take individual slices of prosciutto and fold them into loose bundles – nothing too fancy. Add fig halves alternatively with prosciutto bundles around the burrata. Sprinkle pistachios over the salad and lightly spoon more dressing over the figs, cheese and prosciutto. Take a pinch of Fleur de sel and sprinkle over the entire salad. Add freshly ground pepper and you’re ready to serve!
