Bacon Sauce

No lies, this Bacon Sauce is beyond good. Put this sumptuous sauce on literally anything you like and it’ll make it even better. My only ask here is to buy the highest quality bacon you can. Look for small farms that produce ethically-raised meat with no added sugar, nasty preservatives or antibiotics.

Makes about 3/4 cup

4 slices bacon, cut lengthwise and then diced (ethically-raised pork; see note above)
2 garlic cloves, minced
1 shallot, minced
1 tomato, seeded & diced small (organic preferred)
1 Tbsp. olive or avocado oil
Sea salt to taste

Cook the bacon in a cast-iron skillet until crisp but not too dark. Drain on a paper towel. Sauté shallot and garlic for 2 mins. Add tomato and 1 Tbsp. oil and sauté for 1 min. Add bacon back in, season to taste and remove from heat. This gets even better as it sits and is wonderful on vegetables (especially cauliflower steak and mashed potatoes), pork tenderloin, burgers, baked fish, and probably even dessert. Yes, it’s that good!

Store any left over Bacon Sauce (like you’ll have any!) in the fridge.
